tomato soup with basil and lemon zest

at least once a week we have tomato soup because it is so simple and delicious.



for 4

2 onions

2-4 garlic cloves

800 g canned or one kilo fresh tomatoes

vegetable broth

a handful of basil leaves

zest of one lemon

a slice of toasted brown bread

olive oil

salt & pepper




use a big cooking pan. sweat the minced onions and garlic in olive oil for about 10 minutes. add the tomatoes and 1-2 teaspoons of broth and let it cook. reduce the temperature and let it simmer during 20-30 minutes. take the pan off the stove. liquidize the soup with the hand blender. cut or tear the basil leaves and mix it with the lemon zest. pour the soup in a bowl or a plate, place the slice of bread in it, and spread the basil and the lemon zest over it. spice with salt & pepper.
