tarte tatin with red onions

i love tarte tatin with apples. this variation with onions is different but not less delicious!



for 4 a round spelt puff pastry

8 red onions

2 garlic cloves

1 table spoon honey

2 table spoons balsamic

half a bottle or red wine

a hand full of fresh thyme

a hand full of watercress or arugula

salt & pepper




cut the onions in half and in rings. mince the garlic and put both in little olive oil in a big frying pan. add the red wine, the balsamic, the honey, the thyme, mix it well and spice it with salt & pepper. thicken the onions for about 30 minutes until it is no longer humid. preheat the oven on 200°c. put the onions mixture in a round form and put the pastry over it. put holes in the pastry with a fork and bake the tarte during 20 minutes in the oven. let it cool down for 15 minutes and turn out the tarte on a big plate. decorate the tarte with the watercress or arugula.
