simple but tasty


for 4

250 gr. tofu

coconut oil

250 gr. rice noodles

4 garlic cloves

1 red pepper

1 big carrot

1 chili

3 spring onions

1.5 dl vegetable broth

3 tablespoons of maple sirup

2 tablespoons of soya sauce

juice of a lime

one lime in cuts

1 pack of coriander

2 tablespoons of peanuts


cut the tofu in small blocks and fry them with a tablespoon of coconut oil in a wok or a frying pan. put it in a bowl aside. put the rice noodles in a bowl and douse with boiling water. cover it and leave it during 10 minutes, drip and put aside.

press the garlic and cut the spring onion, the carrot, the pepper and the chili in stripes and fry them with one table spoon of coconut oil in a wok or a frying pan. add the broth and all the other ingredients including the lime juice until it cooks and simmer it during 10 minutes. add the tofu and the rice noodles and mix well.


serve the pad thai in bowls with lime cuts, peanuts and coriander.
