greek salad

this salad is one of my favorites. it's a fresh, tasty light and simple dish for warm evenings.


for 4

1-2 cucumbers

1/2 kilo tasty tomatoes

2 red peppers

small red onion

kalamata olives

creamy feta cheese

parsley

olive oil

red vinegar

salt & pepper




rinse the cucumber, tomatoes, the peppers and cut them in pieces. mince the red onion and the parsley and mix it with the other ingredients in a big bowl. cut the feta and the kalamata olives (take out the stone of the olives first) and mix it with 3 table spoons olive oil and 2 table spoons vinegar. spice it with salt & pepper
