one big or two small cauliflowers, rinsed and cut in pieces

there are two techniques for making cauliflower rice. you can either use a box grater with the medium-size holes or a food processor with the grater blade to blitz it into small pieces. with both techniques you are aiming for little pieces the size of rice. cut the tofu in small pieces and fry them in the pan until they are nice and crispy. cut the garlic and the ginger and press them through the garlic press. with a teaspoon of coconut oil caramilize them in a frying pan. add the cauliflower rice, the peppers, chili, peas, the soya- and tamarind sauce and let it cook shortly. then lower the temperature and leave it on the stove for another 20 minutes. roast 2 handful of cashew nuts. add the tofu to the cauliflower rice and the zest as well as the juice of the lime. mix well and serve in bowls with roasted cashew nuts and coriander.
