couscous with spinach, sweet potatoes and cranberries

the flavour of this dish is fascinating because of the mix with the sweet/sourness of the cranberries, the sweet potatoes and a little lemon juice. and above all, it is so easy!



for 4

2 large sweet potatoes

400 g spinach

1-2 garlic cloves

300 gr full grain couscous

300 ml vegetable broth

300 g full-grain couscous

2 tablespoons of lemon juice

a handful of cranberries



pour 300 ml of vegetable broth on 300 g of full grain couscous and leave it alone. cut 2 large sweet potatoes in small pieces, mix them with olive oil and cook them in the oven for about 25 min at 180°c. cut 1-2 garlic cloves and fry it with 400 g spinach and some olive oil. mix the couscous, the sweet potatoes, and a handful of cranberries with the spinach. spice it with salt and finish it off with one tablespoon of olive oil and two tablespoons of lemon juice.
