bread salad

a great recipe to use old and hard bread.


for 6

250 g old hard bread

500 g cherry tomatoes

1 bunch of radish

1 large cucumber

1 red onion

2 garlic gloves

1 bunch parsley

1 bunch mint

1 bunch coriander

1 tablespoon dried mint

juice of one lemon

3 tablespoons olive oil

1 tablespoon sumach

black pepper

himalayan salt



tear the bread in bite-sized pieces and put in a big bowl. cut the tomatoes, the cucumber, the radish, the garlic, the onion, the herbs and add it to the bread pieces. mix it with the lemon juice and the olive oil, salt and pepper and leave it for about 15 minutes. add olive oil and sumach for the tasting.
